Which species has a particularly interesting evolution for me to do a final project for Life Science on?

I’ve chosen to do my final Life Science project as an in-depth on the evolution of one species. I need to find one that has a particularly interesting evolution history. Any suggestions?

    Darwin’s finches would be an easy one, simply because of the massive amount of information available as a result of his studies.

    If you want interesting, choose a type of infectious bacteria. They mutate incredibly quickly, though that might be pushing the definition of evolution.

    You could use a complex lifecycle, such as the parasite Ascaris lumbricoides.

    You could use an organism that has a tight interdependent coevolution such as the moth and comet orchid or the orchid bees.
