I’m trying to research what other countries were doing in response to the apartheid in South Africa. I’m talking about the major powers that could have done something, and why did the UN Peacekeepers leave? What did the U.S., European powers, and other countries do in response to the genocide?

Your questions are too broad to answer here. This is a pretty poor choice of a place to do research. Just type apartheid or history of South Africa into your browser and you’ll find lots of info.
There were a lot of things the rest of the world did, they mainly imposed social and economic sanctions upon south africa, trying to get them to become a democratic society, The U.S.A didn’t do anyting to stop Apartheid because the South African Army was fighting communism in Africa and America supported that as they did not want communist influence in Africa. People overseas made a concerted effort to advertise to others not to buy any south african goods or merchandise, South Africa was also made to leave the commonwealth. There was also a documentary about the Springbok Rugby team touring New Zealand during apartheid and there was absolute mayhem and rioting in protest of the regime.
There are also a lot of movies and songs made in protest to Apartheid, there was a play called Woza Albert! that toured around the world, and don’t forget Eddy Grant’s song “Give me hope Joanna”, which was a song speaking out against the Apartheid government.
Other than tings like that the world powers didn’t do much do stop it. Pretty much the same as why they not doing anything to stop Mugabe right now.
You would probably get more information on Wikipedia or something else though.
